- Eggplant - 500 Grams
- Wheat flour - 20 grams
- Spinach - 40 Grams
- Green salad - 40 grams
- Tomatoes - 150 Grams

How to cook "Sicilian Eggplant"
We clean the eggplant, cut it into slices 1 cm thick. Roll the sliced eggplant in flour and fry in oil. Set aside the fried eggplants and proceed to preparing the filling. So, the filling. Finely chop green onions, spinach, parsley, lettuce and pepper. Cut the tomato into cubes. Fry all this vegetable mixture in oil, salt and pepper. Actually, now comes the fun part.
