How to make "Chives and Goat Cheese Muffins"
1. Preheat the oven to 200 degrees. Spray a 12-compartment muffin tin with cooking spray or line with paper inserts. In a large bowl, combine flour, baking powder, salt, sugar, baking soda, and chopped green onions. In a small bowl, beat together the egg, melted and chilled butter and buttermilk. 2. Using a dough knife, stir the dry ingredients into the goat cheese until you have a crumbly mixture. Add the creamy mixture and stir with a rubber spatula until smooth. Divide the resulting dough evenly between the sections of the prepared form. 3. Bake for 18 to 22 minutes, until a toothpick inserted in the center comes out clean. Let the muffins cool in the mold for 5 minutes, then remove from the mold. Serve the muffins warm.
