Chopped the tomatoes, chopped the onion, opened the olives, put everything in a bowl, refueled and - voila! A beautiful and tasty appetizer is ready;)

How to make "Eggplant and Tomato Salad"
The first step is to wash the eggplants and remove the stalks. It is not necessary to peel off the skin of young fruits, but if you do not like it, remove it:). Cut the eggplants into slices about 1 centimeter thick, sprinkle with salt and leave for 20-30 minutes to let the juice and bitterness come out. Meanwhile, peel the onion and cut it into half rings. Let's open the olives. If desired, you can grind them, but I put them whole (if very large, then I cut them in half). Squeeze out the juice from half a lemon. Mix lemon juice with vegetable oil, salt, add pepper.
