Honestly, in my mind, chicken broth and peas were somehow not very compatible, until I was treated to such a soup. It turned out that it is not only amazingly tasty, but also very easy to prepare, especially if the broth is prepared in advance. So, a simple recipe for pea soup with chicken broth - to your attention!
First of all, you need to rinse the peas. This will have to be done several times until the water becomes almost transparent.
Then fill the peas with cold water, bring to a boil and remove the foam. Throw it in a colander, rinse it with running water.
Pour the boiling broth over the peas and cook over medium heat.
We wash and clean the vegetables.
We save finely chopped onion and grated carrots in a small amount of vegetable oil.
Put the contents of the pan in a saucepan with peas, add potatoes cut into small cubes and cook until cooked - the potatoes and peas should be completely soft.
Puree the soup with a blender, season with salt and pepper, season with garlic passed through a press and bring to a boil again.
Pour the finished soup into plates, sprinkle with finely chopped green onions, season with croutons and immediately serve. I assure you, no one will refuse this!
