- Hot pepper - 1 Piece
- Garlic - 3 Cloves
- Spices - To taste (hot ground pepper, coriander, fenugreek)
- Salt - To taste
- Fresh parsley - 25 grams
- Oil - 10 Teaspoons
How to cook "Georgian eggplant caviar"
Peel the eggplants, cut and put in the pan. Pour the oils, sprinkle with salt on top and fry for 15 minutes over medium heat. Meanwhile, in another frying pan, fry the finely chopped onions and carrots. Fry over medium heat for 4-5 minutes. Scroll the fried eggplants with bell pepper and garlic through a meat grinder. Add finely chopped tomatoes, salt and spices to the fried onions and carrots. Grind to a puree consistency. In a frying pan, mix the vegetable puree, the eggplant rolled through a meat grinder, add chopped fresh parsley. Stir and heat over medium heat for 3-4 minutes.
