Cooking polandvica is a very long process. It will take almost a month, but the result is worth it. The classic recipe for chicken polandvica involves adding a lot of spices for both the brine and the grind. Despite this, it is not difficult to prepare polandvitsa. In fact, you just need to soak it in brine and then only change the environment in which it will dry. Steps:

1. Pour 1.5 liters of water into a saucepan, add spices: bay leaf, ground bay leaf, cloves, dill seeds, mustard seeds, salt. Bring the brine to a boil.

2. When the brine cools down, throw the meat there. We leave for 4-7 days in a ventilated place, you can on the balcony.

3. Take out the meat from the brine, wipe it with a napkin. Preparing a mixture for grinding. Rub the garlic on a fine grater, add sugar, horseradish, parsley and dill. We rub the mixture on the meat, wrap it in parchment packaging and leave it in the room for a day.

4. Put the meat in a colander or sieve. From above we press it with something weighty. We leave for a day. Juice flowed out of the meat, cut off the rest of the mixture with a knife.

5. Wrap the meat in at least five layers of gauze, bandage and hang it to dry in a dry place. Polendvitsa will be ready in one and a half two weeks.
