Ingredients:
- olive oil - 2 Tbsp. spoons
- carrots - 900 Grams
- large onion - 1 Piece
- Garlic - 4 Cloves (medium or 6 small cloves)
- ginger - 1 Art. spoon (or more to taste)
- vegetable broth - 4 Glasses
- toasted sesame oil - To taste
- green onions - 2 Pieces

How to make "Carrot Soup with Miso and Sesame"
1. Peel and chop the carrots. Peel the garlic cloves and chop. Grate or chop the ginger. Chop the green onion very finely. Heat olive oil in a large saucepan over medium heat. Add carrots, onions and garlic. Fry until the onions are translucent, about 10 minutes. 2. Add vegetable broth and ginger. Cover and simmer until carrots are tender, stirring occasionally, about 30 minutes. 3. Using a hand blender, stir the soup until smooth. If you don't have a hand blender, you can use a regular blender by pouring the soup into the bowl and then returning it to the pot. In a small bowl, beat the miso and 1.5 cups of soup. Pour the mixture back into the soup pot. Season to taste with salt, black pepper, add extra miso if necessary. Pour soup into bowls, drizzle with sesame oil and sprinkle with green onions. Serve immediately.
