How to make Chicken Breast Soup with Gnocchi and Pesto
1. Cut the onion into 4 pieces and cut into pieces. Preheat oven to 175 degrees. Place the chicken breasts on a baking sheet. Sprinkle the breasts with onions and peeled garlic. Pour olive oil over the chicken and season with salt and pepper to taste. 2. Bake the chicken for 35-45 minutes. After cooking, let the chicken cool on a cutting board and then chop the chicken. 3. Set aside the fried onions and garlic for later use. 4. Toss the chicken stock, fried onions, garlic, and 3 tablespoons of Pesto in a blender or food processor. Stir until there are no large pieces of garlic in the mixture. The fried garlic will give the soup a unique taste. 5. Toss the chopped chicken with the remaining pesto in a bowl. Set aside. 6. In a large saucepan, bring the stock mixture to a boil. Add gnocchi and cook,until they pop up. Put chopped chicken into portioned plates. Pour hot broth with gnocchi.
