1. I usually don't cook beets at home, I buy immediately cooked or canned beets. If you decide to cook beets at home, then boil them in your free time. Beets should be soft. It is cooked in a uniform and we clean it when the beets have cooled down. I recommend using mini beets for this salad. So, cut the finished beets in half (if they are small) or into small pieces.

2. Chop the peeled walnuts in a mortar or wrap them in a tea towel and beat them with a rolling pin. Fry them over medium heat for 5-6 minutes.

3. Peel the onion and cut into thin half rings. If you want, you can lightly brown the onions or caramelize them so they are not so hot.

4. Rinse arugula and raspberries, dry on a paper towel. Place the arugula on a large serving platter.

5. Top with chopped beets and raspberries. Chop feta cheese. Lay out the onion.
