How to make Artichoke Spinach Cheese Sauce

1. Melt 3 tablespoons of butter in a skillet over medium heat. Add chopped garlic and cook for 2 minutes. 2. Reduce heat slightly and add spinach. Sprinkle with salt and pepper. Stir and cook for 2 minutes, until spinach wilts. 3. Put the spinach in a sieve and squeeze the excess juice back into the pan. Set spinach aside. 4. Rinse the artichokes and pat dry. Add the artichokes to the skillet and cook over medium-high heat for a few minutes until the liquid in the skillet has evaporated and the artichokes change color. Remove artichokes. 5. Melt 3 more tablespoons of butter in the same pan or other saucepan. Beat with 3 tablespoons flour until a paste is obtained and cook over medium-low heat for 1-2 minutes. Then pour in milk. Stir and cook until the mixture thickens slightly. Add more milk if necessary. 6. Add cream cheese, crumbled feta cheese, grated Parmesan cheese, grated Jack cheese and cayenne pepper. Stir until the cheese is melted and the sauce is smooth.
