How to make "Marshmallow Oatmeal Cookies"
1. Preheat the oven to 175 degrees. Line the baking sheet with a silicone mat or parchment paper. In a large bowl, use a mixer to beat the butter for about 30 seconds, then add the sugar and beat. Add eggs and vanilla extract, beat thoroughly. In a medium bowl, combine flour, cinnamon, baking soda and salt. Add flour to the creamy mixture in two or three passes, stir. Stir in the oatmeal until evenly spread over the dough. 2. For large biscuits, place 2 tablespoons of the dough on a baking sheet, 5 cm apart. For small cookies, use 1 tablespoon of dough. Bake for 10-12 minutes, until golden brown. Allow to cool on a baking sheet for 2 minutes, then cool completely on a rack. 3. Make the filling. In a bowl, beat the butter and sugar together. Stir in vanilla and a pinch of salt. Add marshmallow filling and beat until fluffy. Cover and refrigerate for 30 minutes. If the filling is too soft or too thin, add more sugar. Brush the biscuits with 1-2 tablespoons of the filling and top with the remaining halves to make a sandwich.
