How to cook "Vegetable goulash Ratatouille"
Cut eggplants, zucchini, peppers and onion into small pieces. Cut the tomatoes in half, remove the hard core from above. Heat 4 tablespoons olive oil in a large saucepan. Add eggplant, salt, pepper and fry for 4-5 minutes. Then put the eggplants in a sieve and leave to dry. In the same saucepan, without cleaning, add 2 more tablespoons of olive oil and fry the courgettes for 3-4 minutes. Then put in a sieve. Do the same for the pepper. Pour 3 tablespoons of olive oil into the same saucepan. When the oil is hot add the onion, 3 sprigs of parsley, 3 sprigs of thyme, 3 sage leaves, salt, pepper and fry for 1-2 minutes.
