How to cook "Balkan Eggplant"
Rinse the vegetables thoroughly. Cut the eggplants into cubes and fry in vegetable oil for 7-8 minutes, salt and pepper to taste. Then we transfer them to a baking dish. Cut the tomatoes into cubes and put them in a mold with chopped feta cheese and parsley. Sprinkle everything with oil, mix and bake for 15 minutes, temperature 180 degrees. Then remove the mold and pour over the eggplants with an egg, beaten with milk and a pinch of salt. Increase the temperature to 200 degrees. Bake until golden brown. Enjoy your meal!
