Chop the carrots, add salt and knead with your hands to make the juice stand out. Add chopped garlic, vinegar and Korean style carrot spice. Stir and refrigerate. Pour boiling water over the dry funchose, cover with a plate or lid. Leave it on for 10 minutes. Peel the eggplant and cut into thin cubes. Drain the water from the funchose. Cut the funchose with scissors. Fry the eggplant in vegetable oil.
