How to make "Watermelon Peel Marmalade"

Use a knife to cut off any remnants of the pink pulp, as well as the green rind. Cut the crusts as you like. You can give them any shape you want. Dissolve the baking soda in a glass of hot water, pour into a saucepan with another 10 glasses of cold water and soak the cut crusts in this mixture for 6 hours. Then rinse the crusts thoroughly several times under running water. Boil the syrup from one and a half kilograms of sugar and 7 glasses of hot water. Put the watermelon rinds in it, bring to a boil and boil for 15 minutes. Then leave the dish in a cool place overnight. The next day, add the remaining sugar, stir again, bring to a boil and cook for 15 minutes. Then set it aside for another day. On the third day, add a couple of glasses of hot water to the pot and cook after boiling for an hour. Add the zest and vanilla a couple of minutes before the end of cooking. Remove the finished marmalade from the syrup, cool and serve. You can also stock up on the marmalade for future use - let it cool to room temperature, put the pieces of watermelon peels in a sterilized jar, fill with syrup and seal.
