How to cook "Rabbit in a smokehouse"
Remove the skin from the rabbit, gut and rinse. Pat dry with paper towels. Rub the carcass inside and outside with salt and pepper and leave to marinate for 35-40 minutes. Then place it on the grill of the smoker. Chips of fruit trees or alder are good for smoking a rabbit. Soak it for 15-20 minutes and then add it to the bottom of the smoker. Light a fire. And smoke the rabbit until tender. It will take about an hour. Then cut the meat into portions and serve with a side dish and fresh herbs.
