Cooking description:
1. Pour sugar into the pan (leave about 2 tablespoons) and add a little water. Melt sugar over low heat and boil some caramel.
2. When it turns brown, add the nuts to the pan. You can use not only hazelnuts, but also any other nuts in the recipe for making ice cream with nuts. The main requirement is to pre-fry the nuts so that they are crispy.
3. Remove the pan from heat and, while stirring, roll the caramel nuts over the nuts.
4. Prepare a sheet of parchment and put the nuts there. Allow to cool. Then grind a little in a blender.
5. Carefully separate the whites from the yolks. Beat the remaining sugar with the yolks for about 10 minutes.
6. In a thin stream, pour the cream into the yolks, whisking for another 15 minutes. The mass should be airy and grow well in order for the ice cream with nuts at home to be soft.
7. Separately beat whites with a pinch of salt.
8. Combine both masses, carefully introducing proteins.
9. Now it remains to add the chopped caramel nuts and gently mix again.
10. Transfer the prepared mass to an ice cream maker or plastic container. Place in the freezer for about 30 minutes.
11. This is a fairly simple recipe for ice cream with nuts, there is no need to stir it constantly. After about half an hour, gently stir once and after another 10-15 minutes you can taste.
