I recommend all lovers of dairy products to try to prepare delicious and healthy cottage cheese from sheep's milk on their own. For breakfast or light dinner, it is the perfect snack.
There are many recipes for cottage cheese or cheese made with sheep's milk. For example, the well-known feta is traditionally made from sheep's milk. To prepare cottage cheese from sheep's milk, we take a liter of homemade fresh milk, be sure to pepsin - otherwise whey will not form, homemade yogurt (you can buy at the bazaar or in the same store) and salt to taste. It turns out a rather dense cottage cheese. Ideally served with olives, in a Greek salad, or as a shaving brush for sandwiches.

- Milk - 1 Liter
- Yogurt - 1 Tbsp. the spoon
- Aciddin-Pepsin Tablet - 2 Pieces
- Sea salt - 1 tbsp. the spoon
- Water - 0.3 cups
How to make "Sheep milk curd"
Heat milk to 30-32 degrees (it should not be cold, but a little cool). Add a tablespoon of homemade yogurt, grind 2 tablets of Acidin-Pepsin into powder, pour over with cold water and add to milk after an hour. After 30 minutes, the milk curdled and turned into a thick smooth layer of yogurt, a cloudy whey floating on top of it. Leave the curdled milk at room temperature to infuse for 24 hours. Then cut the same smooth layer into squares. Stir the "squares" twice with a break of several minutes and pour everything into cheesecloth. Then hang the cheesecloth to glass the serum. Cottage cheese stacks well in half a day. Transfer the curd to a clean container and salt.
