On the eve of New Year's holidays, the question of how to prepare a New Year's chicken salad and at the same time surprise guests with originality is very acute. I offer my exotic version of the salad.
I use fresh pineapple, which adds a special exotic flavor to the dish. But you can also use canned, it only depends on your taste.
You can use both chicken breast and chicken fillet. I usually fry them without seasoning, just in a skillet with vegetable oil. You can also bake the chicken in the oven to make the meat more juicy.

- Fried Chicken Breast - 1 Kilogram
- Pineapple - 2 Pieces
- Red onion - 0.5 Pieces
- Celery - 2 Pieces
- Parsley - To taste
- Lemon juice - 2 Tbsp spoons
- Garlic - 1 Clove
- Greek Yogurt - 150 Grams
- Mayonnaise - 150 Grams
- Curry - 1 Teaspoon
- Salt, Pepper - To taste
How to cook "New Year's" chicken salad"
Rinse pineapples under cold water. Wipe dry. Use a sharp knife to cut the pineapple in half. Then remove the pulp. To do this, hold the knife at an angle, cut the pulp along the contour. Use a spoon to remove the contents. Repeat this with two pineapples. Prepare the ingredients for the salad. Cut the pineapple pulp into cubes. Cut the fried chicken breast into small pieces. Lightly fry the almonds in a skillet. Place everything in a deep bowl. Add chopped red onion, celery, parsley and toasted almonds. The main accent of this salad is the extraordinary sauce. To make it, combine lemon and pineapple juice with Greek yogurt and mayonnaise. Add finely chopped garlic to the mixture and mix well. Add a teaspoon of curry and salt and pepper to taste. Stir the sauce thoroughly again. Mix the resulting dressing with the salad ingredients. Put the resulting salad in pineapple halves and serve to your guests. Enjoy your meal!
