Beets are an irreplaceable ingredient on the New Year's table. But not many people know how to make a New Year's salad from beets and not get, in the end, a herring under a fur coat. Here's my recipe for a fresh New Year's snack.

How to cook "New Year's salad from beets"
Peel the carrots, rinse under running water, wipe with a dry towel. Grate. I use Berner's Grater which allows me to get chunks like in "Korean carrot". However, you can also use a regular coarse grater. I prefer to eat beets raw, as this way they retain more useful properties and vitamins. Grate the beets in the same way as the carrots: on a Berner grater or on a coarse grater. Peel the apple and remove the skin and seeds. Grate it with a Berner grater or a coarse grater. For those who do not like the combination of sweet and sour apples with beets, you can skip this step. For my taste, the apple adds freshness to the dish. You don't have to use it. The seeds should be peeled and lightly roasted in a dry skillet. Then wait for them to cool down. Also, you can buy already peeled and roasted seeds,which will save cooking time. Peel the pomegranate, remove the grains. Add cooled seeds and pomegranate seeds to salad. Prepare a salad dressing. Mix lemon juice with olive oil and salt. Mix the resulting mass thoroughly and add to the salad. Your beet salad is ready!
