Cake "Khreshchatyk" may remind someone of "Kiev" (due to protein cakes, reminiscent of meringues). But, as for me, it is much more refined: more delicate, and the cream is not as greasy as in Kiev, although it is in oil. To make a khreshchatyk cake, we need any nuts (I had walnuts, but almonds or hazelnuts are also fine). Cream should be fat - 22%.   • Nuts - 200 Grams
  • Flour - 3 Art. spoons
  • Sugar - 250 Grams
  • Cinnamon - 1 Teaspoon
  • Cream - 200 Milliliters
  • Butter - 300 Grams
  • Condensed milk - 50 grams
  • Almond Petals - To taste

How to cook "Cake" Khreshchatyk"

Peel and grind the nuts in a blender to crumbs (not the smallest, of course, but without coarse pieces). Do it in portions so that too much oil does not form in the process. Separate the whites from the yolks. Whisk until white foam with a pinch of salt. Add all the sugar, flour and cinnamon gradually with a spoon, whisking. Insert the nuts in a circular motion (also gradually and carefully). Better to do this with a wooden spoon. Take baking parchment, spread the protein mass with a layer of 0.5-1 cm. Diameter - 24-26 cm. By the way, if you want a tall cake, reduce the diameter accordingly. Another important point: do not immediately smear the entire mass, do as much as fits in the oven to bake at a time: for example, 2 sets of 3 cakes each. You can put proteins in the refrigerator for this time. So, bake 15 minutes at 150 degrees in a preheated oven. The cakes will be slightly soft, making them easier to remove from the parchment. Let them cool down. Meanwhile, beat 4 yolks with sugar (50 grams) until they are white. Then pour in another 50 ml. cream, whisk everything together. The remaining 150 ml. Bring the cream to a boil, pour the egg-cream mixture into them in a trickle and boil for another 10 minutes, do not stop stirring.
