How to cook "Ukrainian jellied meat"
The meat is pre-washed and then soaked in cold water for several hours. Transfer the meat to a large pot and fill it with water. Bring to a boil over medium heat. Remove the foam on the surface with a spoon. Reduce heat to low and leave to simmer for 4 hours, stirring gently from time to time. Now add the spices and the washed but unpeeled vegetables to the pot. Cook for another hour and a half. Remove the pan from heat. Gently remove the meat, separate it from the bones. Add chopped garlic, salt and pepper to the broth, let stand for 20 minutes. Then strain well through cheesecloth. Cool it down. Arrange the meat on plates, add a little chopped greens - and pour over with cooled broth. To harden, place the jelly in the refrigerator for 3-4 hours. Enjoy your meal!
