The name "medallions" comes from the round shape of the slices, which are obtained by slicing beef or pork tenderloin. Yes, it is the cuttings (of a sedentary cylindrical muscle, the structural features of which allow you to get the most tender cooked meat). This time we will use chicken fillet, so we won't be able to achieve a round shape with regular slicing. Therefore, we have to approach the issue with a share of creativity.

How to make Chicken Medallions
First of all, fry the finely chopped onion with pre-defrosted mushrooms. In this particular case - white and boletus. Remove the skin from the fillet, cut it off the bone. We wash the resulting pieces with running water, dry and cut as finely as possible. The resulting mass should resemble minced meat in its consistency. Season the sliced fillets with the chicken spice mixture and salt. Add ketchup and mix thoroughly. Add mayonnaise to mushrooms and onions. We mix. Prepare a baking sheet: lay with foil and grease with oil. We form minced meat medallions, as shown in the photo. On each "medallion" we put mushrooms and onions (plus or minus a teaspoon) and sprinkle with grated cheese on top.
