I wondered for a very long time how to cook khinkali with kefir to make it delicious. I tried many recipes, but it turned out, to put it mildly, badly. But this recipe amazed me, it came out amazing!
A great full lunch or dinner is ready. Serve khinkali on kefir beautifully, put khinkali on a plate, put chicken meat on another, pour warm broth into a saucer, prepare sauce. You can use tomato paste as a sauce, but I don't really like it and make sour cream sauce. To do this, mix garlic, sour cream and herbs, pour with khinkali sauce, it turns out incredibly beautiful and tasty. Prepare khinkali with kefir at home.

How to cook "Khinkali on kefir"
Sift flour into a large bowl. Add a little soda (do not extinguish), a little salt, purely to your taste. Stir and pour in kefir or sour milk. I usually pour kefir by eye, until the dough becomes steep and smooth. Stir the dough with your hands, it should be smooth and elastic. Leave the finished dough in the refrigerator for several hours. After the dough has cooled, divide it into 2-3 pieces, sprinkle flour on the countertop for convenience and prepare a rolling pin. Roll out the dough into thin pieces, about 7-10 mm. After that, take a knife and cut the future khinkali into pieces, the pieces should not be large, otherwise it will not turn out very tasty and it will be inconvenient to eat them. Boil the broth, for this, put a piece of meat in salted water, I preferred chicken, a little seasoning, cook for about 1.5-2 hours. After the broth is ready, catch the meat out of it, put the khinkali there and cook for about 15-20 minutes. Arrange ready-made khinkali on plates and serve with meat and sauce. Enjoy your meal!
