It should be borne in mind that the fruits of chokeberry have a very small sugar content, so you need to add 50% of the total amount of berries. If you take mountain ash immediately after the first frost, then the sugar content will be maximum and the rate of its introduction can be slightly reduced. So, let's start cooking.

1. We take ripe berries. Pour them into a saucepan and knead them so that each berry is crushed (we do it manually with gloves or with the help of crushing).

2. Pour the crushed berries into a fermentation container, add sugar, pour water and diluted yeast, mix everything thoroughly. Tie the top of the container with gauze and set aside at room temperature in a dark place for 48-72 hours.

3. After the specified time, we check the mash for readiness: the appearance of foam, sour fermentation smell. As soon as these signs appear, we install a water seal.

4. Leave the drink to ferment under a water seal for 15-40 days, stir the whole mash every three days.

5. After the end of fermentation, drain the mash, and the sediment should remain at the bottom.

6. We distill the finished mash and get about three liters of strong moonshine.
