Duck meat is quite fat, and if it is still poorly stewed, it will also be tough. Therefore, to cook duck stewed with cabbage and prunes, you should be patient, since the cooking time can stretch for 3-4 hours. - Cabbage - 500 Grams

- Raisins - 100 Grams
- Apples - 3 Pieces
- Red wine - 200 Milliliters
- Onion - 300 Grams

- Lard - 200 Grams (or duck fat)

How to cook "Duck stewed with cabbage and prunes"
Cut the onion into cubes, fry it on lard in a preheated pan or cauldron. Cut the pork into cubes (if you decide to combine the duck with the pork) and add to the onion. If the duck is whole, separate the legs and breast and fry on the lard. You can do this in a separate skillet or add directly to the pork. It is not bad to cook broth from the remaining duck, we will add it later for stewing, you can add water, but it tastes better with duck broth. When onion, pork and duck are fried, put everything in a deep frying pan or cauldron, pour in 0.5 glasses of wine. Simmer the meat over medium heat until the wine boils down. While the meat is stewing, take care of the cabbage: squeeze the sauerkraut slightly, put it in a cauldron to stew for about half an hour. This is where the duck broth comes in handy, add it to the sauerkraut. Chop fresh cabbage into medium cubes,you can also add ham or bacon to the dish. It also needs to be cut into cubes. Add chopped fresh cabbage to sauerkraut, add more duck broth, simmer everything together for another 30 minutes. Transfer the stewed cabbage to the meat. Meanwhile, fry the chopped bacon (or other smoked meats) in a pan. If dry mushrooms are found in the house, it is worth soaking them to soften. Dried apricots and prunes can be cut in half. And marinate raisins in cognac. Add bacon, mushrooms, dried fruit to cabbage with duck and pork. Pour in the remaining half a glass of wine, you can pour in the water from the mushrooms, simmer over low heat for 1.5-2 hours. Yes, it takes a long time to prepare, but it's worth it! Don't forget to add spices like bay leaves, cumin, coriander and a mixture of peppers.
