1 Preheat a skillet and add the coriander seeds, cook for 1-2 minutes, then transfer to a blender and chop. 2 Peel and wash the carrots, cut them into thin strips or grate them on a special grater. 3 Transfer the carrots to a large bowl, add salt and stir, set aside. 4 In another bowl, combine the red flakes with vinegar and set aside. 5 Heat a skillet with olive oil, peel and cut the onion into half rings, fry it in the pan, remove from heat and add the pepper and vinegar mixture. 6 Add all spices and vegetables (peeled garlic and fried onions) to the carrots, stir. Arrange the carrots in jars and leave for 1-2 hours.
