How to cook "Salmon tartare"
Send the fish to the freezer for 15 minutes, then cut into small cubes, add lemon zest to it. Chop tomatoes, cucumber, onion finely. Combine tomatoes, cucumber, capers, basil with half an onion, drizzle with oil, lemon juice, sprinkle with salt and pepper. And add the remaining onion to the fish, add salt and sprinkle with oil and juice. Take a cylindrical mold or a culinary ring (it is better to cover the mold with cellophane), put the fish down and the vegetable mixture on top. Tamp the dish into a mold, then transfer to a plate and serve with, for example, potato chips.
