- Beef Tenderloin - 2 Kilograms
- Garlic - 4 Cloves
- Rosemary - 1 tbsp. the spoon
- Thyme - 1 Art. the spoon
- Young onion - 1 tbsp. spoon (crushed)
- Italian herbs - 1 tbsp. the spoon
- Chili Pepper - 1 Teaspoon (dried, flaked)
- Dijon Mustard - 1 Teaspoon
- Balsamic Vinegar - 1 Teaspoon
- Lemon Juice - 1 Teaspoon
- Olive oil - 0.5 cups
- Parsley - 0.5 Bunch

How to cook "Carpaccio"
1. First, mix very finely chopped parsley, 2 cloves of garlic, rosemary, thyme, onion, Italian herbs and salt. Rub the meat with this mixture and let it stand in this form for two hours in the refrigerator. Then let it stand outside the refrigerator for another two hours. Mix separately the olive oil, chili flakes, leftover garlic, and some spices to taste. Lubricate the meat with this mixture in order to "glue" the green crust to it completely. 2. Now mix separately the sauce: mustard, lemon juice, vinegar, salt and pepper. Sprinkle the meat with this sauce, but leave a little for serving. 3. In a frying pan, begin to fry the meat. Do not fry for a long time (only 1-2 minutes on each side), in total, no more than five minutes in a hot frying pan. 4. Then leave the meat to stand for a while, then cut into thin slices and serve.
