Ginger is used for sushi, it helps to get a good taste of each type, if you buy different. That is, ginger is eaten between different types of sushi to remove the taste of the previous type.
It is tart and rich in taste, not everyone likes this. But my recipe is for those who love ginger. There is no need to buy a ready-made one if you can easily make it yourself.
Main ingredient: Ginger

- Ginger - 225 Grams
- Vinegar - 5 Tbsp. spoons
- Maple Syrup - 0.5 Cups
How to make Pickled Ginger with Plain Vinegar
1 Peel the ginger root and use a grater to chop it into thin slices. 2 Transfer the ginger to a saucepan and cover with water (2 fingers), put it on fire and cook after boiling for 5 minutes. 3 Discard the ginger in a colander and rinse with cold water, then transfer to a saucepan and cover with water, put back on the fire and cook for 5 minutes. Repeat the procedure 2 more times. 4 Transfer the ginger 5 times to the saucepan again, cover with water and add the vinegar, maple syrup. 5 Bring to a boil and simmer for 15-25 minutes. Remove the saucepan from heat and refrigerate the mixture, transfer to the jar and refrigerate for 2 weeks.
