Ingredients:
- Mackerel - 2 Pieces (I had small fish, whole, with heads)
- Lemon - 1/2 Piece
- Thyme - 1 Bunch
- Parsley - 1 Bunch
- Salt, pepper - To taste
- Olive oil - 2 Tbsp. spoons

How to cook "Grilled Mackerel"
1 First of all, clean the fish, remove the intestines, gills, rinse it under running water and wipe off excess moisture with paper towels. 2 Rub the fillet inside with olive oil, salt and pepper to taste. Place half of the chopped thyme and parsley inside and spread out the lemon slices. 3 Brush the top half of the fish with olive oil, season with salt and pepper and place the seasoned side on the preheated wire rack. 4 Cook the mackerel over medium heat for 5-8 minutes until golden brown. Before turning the fish to the other side, grease it with oil and sprinkle it with salt and pepper. Gently flip the fish over to avoid losing the filling and keeping the skin intact. 5 Cook the fish for another 5 minutes until tender. When it's crispy, the fish is ready.
