  • Brown sugar - 250 grams
  • Butter - 100 grams
  • Flour - 500 Grams
  • Cocoa - 2 Art. spoons

  • Lemon zest - 1 Piece
  • Soda - 1.5 Teaspoons
  • Orange zest - 1 Teaspoon
  • Ground cinnamon - 0.5 Teaspoons
  • Ground cloves - 0.5 Teaspoons
  • Cardamom - 0.5 Teaspoons
  • Nutmeg - 0.5 Teaspoons
  • Coriander - 0.5 Teaspoons
  • Cognac - 20 Milliliters (or vodka)

How to make Lebkuchen Cookies

1. Mix honey with sugar and put in a water bath. Add butter and let it dissolve completely. 2. Add lemon and orange zest, ground cinnamon, ground cloves, cardamom, nutmeg, coriander, a pinch of allspice. Stir well and add cognac. 3. Hold the mixture in a water bath until the sugar is completely dissolved. Then remove it from heat and cool slightly. Add baking soda and eggs, lightly beaten with a whisk. 4. Stir, add cocoa, sifted flour and mix with a mixer. Cover the dough with cling film and leave in the refrigerator for 2 hours. The dough should be fairly thick, but not tight. 5. Pinch off small pieces from the dough and form into cookies. Place the cookies on a baking sheet lined with parchment paper,decorate with a nut and bake in an oven preheated to 180 degrees for 15-20 minutes. 6. Allow the cookies to cool completely and cover with melted chocolate. Enjoy your meal!
