I want to show you one very interesting variation of the famous Caucasian soup. It is rich, very appetizing and satisfying, aromatic and spicy. It's impossible to get past such a recipe, right?
I will tell you how to cook "Kharcho" in Kuban style. Unlike the original recipe, it contains potatoes, fresh plums, and carrots. As for the spices, you can add whatever you like best.
The soup is thick enough that it is great for lunch for the whole family.

- Beef - 700-800 Grams
- Rice - 1 Glass
- Plums - 4-6 Pieces
- Onion - 2 Pieces
- Tomatoes - 3-4 Pieces
- Potatoes - 2 Pieces
- Carrots - 1 Piece
- Walnuts - 1 Glass
- Garlic - 2-4 Cloves
- Salt and spices - To taste (pepper, paprika, sugar, thyme, saffron, suneli hops)
- Greens - To taste (cilantro, parsley, dill)
- Butter - 1 Tbsp. the spoon
How to cook " Kharcho "in Kuban style"
1 Wash the beef, cut into small cubes and place in a saucepan. Pour in water and after boiling, cook for about an hour, removing the foam. Halfway through the process, season with salt to taste. 2 Peel and slice potatoes, rinse rice. Place them in a saucepan with meat and cook over medium heat for 10 minutes. 3 In a skillet with butter, fry the chopped onion until transparent. Add the grated carrots and fry for another 3-4 minutes, stirring occasionally. 4 Place finely chopped tomatoes there. 5 Remove the skin and pits from the plums, chop the pulp with a knife or in a blender. Add to vegetables. Cook for a couple more minutes. 6 Add a pinch of salt and sugar to the pan, a little spices. Put chopped nuts, stir. Remove from heat and place the dressing in a saucepan.
