How to cook "Georgian sauce"
1 First, wash the plums. We put a pot of water on the fire, bring to a boil. Throw the plums into boiling water for 30 seconds, then pour them into a colander and rinse them in cold water. We remove the skins and remove the bones. 2 In a separate saucepan over the fire, combine the plums, a glass of water, lemon juice, wine, coriander, salt, pepper flakes, black pepper and cumin. Soak the plums in this mixture until they are very soft, then pour the mixture into the blender bowl and grind everything. Next, return the puree to the pan and add the chopped dill and cilantro. 3 Cook for another 5 minutes. Based on taste preferences, add salt, lemon juice and vinegar. If the sauce is too tart, add sugar. Serve at room temperature.
