How to make Vegetable Udon Noodles
1 First you need to heat the oil in a cast iron skillet over low heat. While the oil is warming up, add water to the pan and bring to a boil, then add the noodles there and cook until tender over medium heat. 2 Add finely chopped onion, garlic, pepper and broccoli to the pan, fry for 5 minutes, season with salt and pepper. Mix thoroughly. 3 Add the tomato, Hoisin and Mirin sauce to the vegetables, then a few basil leaves, simmer for a minute. 4 As soon as the udon is cooked, add it to the vegetables, mix everything thoroughly.
