I cook zucchini cutlets regularly every summer. All my household members really like them. The dish turns out to be very economical, light, and thanks to the minced meat, it is also satisfying. You don't have to stop at the zucchini alone - you can add chopped bell peppers, onions, carrots, cauliflower to the minced vegetables (you also need to squeeze the juice from it). By the way, the cutlets are very tasty if you take half the zucchini and eggplant. In general, try, experiment and enjoy the result of your creations!

- Zucchini - 1 Piece
- Minced meat - 250 Gram
- Eggs - 2 Pieces
- Semolina - 1 Art. the spoon
- Breadcrumbs - 3-4 Tbsp. spoons
- Salt, pepper - To taste
- Vegetable oil - 1 tbsp. spoon (for frying)
How to cook "Fried Zucchini and Minced Meat Cutlets"
Prepare all the ingredients you need. Choose a small zucchini, no more than 20 cm long, with a green peel. Cut the zucchini into random pieces and place in a blender bowl. I don’t cut the skin off, but you can do it if you want, especially if it’s white and hard. Grind the zucchini until smooth. Of course, you can grate it too, but it's easier and faster there. Transfer the crushed zucchini to a fine sieve and leave for 30 minutes, and then squeeze additional hands to remove the liquid. Combine the zucchini with minced meat, eggs, semolina and half of the bread crumbs, add salt and pepper to taste. Stir the mixture well until smooth. Please note that now it will still be slightly watery, do not rush to add more flour or bread crumbs. Leave the mass for 15-20 minutes,to swell the semolina, and mix again. If, nevertheless, the zucchini mass for cutlets remains thin, then feel free to add some more bread crumbs or flour. Pour the remaining bread crumbs into a small dry plate. Form small patties from the minced squash and dip in breadcrumbs on both sides.
