Cut the eggplant into slices 6-8 mm thick. It can be thicker, but I really like it when the eggplants are very thin, then they bake well, become very crispy. Brush each eggplant circle with tomato sauce. Chop the champignon finely and place the slices on top of the sauce. Chop the pepperoni finely and place on mini pizzas. Grate hard cheese on a fine grater. Sprinkle the eggplant slices generously with cheese. You should get straight beautiful high slides. Bake mini pizzas on eggplant at 180 degrees for 15-20 minutes.
