Ingredients:
- Eggplant - 1 Piece
- Leeks - 4 Pieces (stems)
- Soy Sauce - 30 Milliliters
- Water - 30 Milliliters
- Sugar - 60 Grams
- Wine vinegar 9% - 1 tbsp. the spoon
- Sriracha - 1 Art. spoon (sauce)
- Lime juice - 1 Tbsp. the spoon
- Vegetable oil - 50 Milliliters
- Salt, pepper - To taste
- Fresh coriander - 1 Bunch (or parsley)

How to make "Leek Salad"
Wash the vegetables. Combine sugar, sauces, vinegar, lime juice in a small jar. Shake it well to dissolve the sugar. Cut the eggplant into small cubes without peeling. Preheat the oven to 200 degrees, bake the eggplants, sprinkle with oil and sprinkle with salt, for 20-25 minutes, turning over from time to time. Cut the onion stalks in half lengthwise. Place the onions cut-side down on a baking sheet, drizzle with oil and salt. Bake for 12 minutes, then remove, cool and chop the onion finely.
