Nut jam is very common in the Caucasus and the East. It is prepared in Armenia and Uzbekistan. For this dish, only young fruits are suitable, in which a hard shell has not yet formed.

- Walnuts - 1 Kilogram (young)
- Sugar - 1.5 Kilograms
- Lemon - 1 Piece
How to make "Nut Jam"
You will need green walnuts for this recipe. In the cut, they should look light, without a hard shell. Wash the nuts, cut off the ends from both sides. Then place them in a container and fill with water. Let the nuts sit to dissipate the bitterness. This will take ten days. The water needs to be changed three to four times every day. Use a fork to prick each nut, then soak it for another couple of days. Drain the water from the nuts, boil a new one in a saucepan and put them in boiling water. Let the nuts simmer. In the meantime, prepare the syrup. To do this, mix the sugar with lemon juice and several glasses of water. Boil the mixture in a separate saucepan. Transfer the nuts to the syrup, cook for ten minutes. Then turn off the heat and let the nuts sit in the syrup for two to three hours. Repeat the procedure three to four times. Pour the finished jam into sterilized jars and tighten the lids.
