How to make Pork Medallions with Garnish
Boil peeled and coarsely chopped potatoes in salted water until tender. Divide the cabbage in half. Turn the onion into minced meat. Cut the tenderloin into medallions. Then crush the potatoes in mashed potatoes with a spoonful of cream, pepper and salt. In the meantime, send the cabbage to bake at 200 degrees in the oven. Add salt, pepper and a spoonful of oil to the cabbage. Roast vegetables for 16 minutes. In the meantime, fry the medallions on each side in a pan with oil for 4 minutes. Then put the meat on a napkin so that the excess fat goes away. Reheat the oil in the skillet. Add onion. Fry it for 2 minutes, stirring occasionally. Pour in vinegar and thyme. After a minute, pour in the mustard and cream. Bring the sauce to a boil, then cook for 3 minutes, stirring occasionally. After that, heat the pork in this sauce, pouring over it.
