  • Carrots - 1 Piece
  • Garlic - 1-3 Cloves
  • Peppercorns - 5-6 Pieces
  • Bay leaf - 2 pieces
  • Pickled capers - 1 tbsp. the spoon
  • Dried tomatoes in oil - 7-10 Pieces
  • Salt, ground black pepper - To taste
  • Gelatin - 1 Art. spoon (for 400 g of broth)

How to cook "Pork knuckle terrine with capers and sun-dried tomatoes"

So, for cooking you need the shank itself, onions, carrots and spices. Clean the shank thoroughly with a knife under water. Be sure to cut off the print area. Pour cold water over it and boil for 15 minutes. Drain the water, wash the pan, shank. Fill the meat with clean cold water, the shank should be completely covered with water. Bring to a boil, reduce heat to low and cook for 2 hours. Then add carrots, onions, garlic, spices and salt. Cook for another 1 hour. Cool the meat. Carrots can or may not be added to terrine. Prepare terrine capers and tomatoes, mold, cling film. Carefully remove the skin from the shank. Chop the meat finely. Add capers, sun-dried tomatoes, carrots, salt and spices as desired.
