Do you want to try a dish from the cuisine of Western Ukraine? Then see how to make Lemberg salad. The combination of boiled potatoes, fried mushrooms, pork and onions is simple, satisfying and delicious.
This salad will amaze you both with its taste (mouth-watering mushrooms combined with meat and vegetables) and with its juiciness: mayonnaise combined with grated pickled cucumbers and mushroom juice - you’ll just lick your fingers! In the original, the mushroom layer of salad needs to be tightened with mayonnaise, but I would not recommend doing this: before serving the dish, the mayonnaise will have time to weather. Don't forget to garnish the finished dish with chopped herbs.

- Mushrooms - 500 Grams
- Pork tenderloin - 500 grams
- Potatoes - 4 Pieces
- Onion - 1 Piece
- Pickled cucumbers - 3-4 Pieces
- Mayonnaise - To taste

- Parsley - 1 Bunch
How to cook "Lemberg salad"
1. Cut the onion into thin half rings and fry in vegetable oil until golden brown. Cut the mushrooms into thin slices and fry in a pan. 2. Fry the mushrooms so that most of the liquid has evaporated (salt and pepper to taste). Grate the boiled potatoes on a coarse grater directly onto the salad serving dish. 3. Season with salt and pepper to taste. Brush the potato layer with mayonnaise. Cut the meat into small strips and place on a potato layer. Brush it with mayonnaise and pepper. 4. Grate cucumbers on a fine grater and distribute on a layer of meat. Put the fried cooled onion on top (in a thin layer). Put the mushrooms on top, the layer can be greased with mayonnaise. 5. Garnish with chopped parsley. Leave the salad in the refrigerator for 1 hour. Enjoy your meal!
