- Zucchini - 1 Piece (small, about 300 grams)
- Eggplant - 1 Piece (small)
- Onion - 1 Piece
- Carrots - 1 Piece
- Tomatoes - 1 Piece
- Bulgarian pepper - 1 Piece
- Squid rings - 100-150 Grams
- Vegetable oil - 2 Tbsp. spoons
- Salt - 0.5 Teaspoons (to taste)
- Ground black pepper - 1-2 Pinch (to taste)
How to cook "Ratatouille with squid"
1. Vegetables for ratatouille are better to take young, small size. I use squid rings. If you have squid carcasses, they must be carefully peeled. 2. Put a frying pan with vegetable oil on the stove, let it heat up over medium heat. Until then, peel the onions and carrots and cut them into small cubes. We send to the pan. 3. Boil the squid rings. Throw them in lightly salted boiling water and cook for 3 minutes. 4. Dice the zucchini, eggplant and bell pepper in the same cubes as the carrots. Don't mix the eggplant with the rest of the vegetables! 5. Onions and carrots are fried until soft, add eggplant to them. I like the vegetables in this dish to crunch slightly and not turn into porridge. Therefore, I fry for a very short time. 6. Are the eggplants slightly soft? Add zucchini and bell pepper.
