It is best to use custard or curd cream as a filling for such pies, as they hold their shape well and remain sufficiently moist after baking. As a supplement, you can use not only prunes, but also raisins, dates, candied fruits, nuts.

Ingredients:

  • Fine sugar - 50 grams
  • Flour - 175 Grams
  • Cold oil - 90 Grams
  • Egg - 1 Piece
  • Salt - 1 Pinch
  • Starch - 2 Art. spoons
  • Sugar - 50 Grams (filling)
  • Toasted almonds - 25 Grams
  • Prunes - 200 Gram
  • Milk - 300 Grams
  • Liquor - 1 Teaspoon
  • Vanilla - Part 1
  • Yolk - 4 Pieces (in the filling)
  • Protein - 1 Piece

How to make "Custard and Prune Cake"

1. Add sugar, salt and butter to flour. Grind the mass until a homogeneous crumb state. Add the egg and scoop up the dough. Transfer the dough to a bag and refrigerate for 20 minutes. 2. Chop the dough with a fork. Roll the finished dough into a layer the size of a mold, and distribute in the mold, forming sides. Cover the dough with parchment, lay out the load - peas, for example. 3. Send the form into an oven preheated to 190 degrees for 15 minutes. Remove the filling and bake for another 10-15 minutes. Lubricate the hot base with protein and leave to cool. Prepare the cream: pour milk with vanilla into a saucepan and heat. 4. Mix the yolks with a mixer with sugar. Add starch and stir. Add warm milk to the egg mass in small portions, stirring the mass well with a mixer each time. 5. Bring the mass to a boil over low heat, simmer for two minutes,then add the liquor. Stir, cover with plastic wrap and leave to cool. 6. Fill the dough base with the custard. Top with prunes, sprinkle with almonds. Place the cake in the oven for 10 minutes. Sprinkle icing sugar on top of the finished cake. Enjoy your meal!
