- Olive oil - 2 Tbsp. spoons
- Onion - 1 Piece
- Broth - 5 Glasses
- Water - 1 Glass
- Rice or orzo - 0.5 cups
- Chicken breast - 450 Grams
- Salt, pepper - To taste
- Lemon juice - 3 Tbsp. spoons
- Eggs - 3 Pieces
- Parsley - To taste
Servings: 6-8
How to cook "Avgolemono"
1. Peel the onion and cut into small cubes. Preheat a saucepan with vegetable oil and put onions, fry them for 4-5 minutes. 2. In a separate saucepan, boil rice or orzo until tender. Pour the broth and water into a saucepan to the onion, bring to a boil. Place boiled rice or orzo in a saucepan. Cut the boiled breast into small pieces and place with the rest of the ingredients. Cook the soup for about 5-8 minutes, season with salt and pepper to taste. 3. In a separate bowl, beat the chicken eggs until smooth. 4. Add lemon juice and whisk vigorously. 5. Remove the soup from the heat and stir in the egg-lemon mixture while stirring. Serve the soup immediately, garnish with chopped parsley.
