Combine yeast and warm water in a measuring cup and let sit for five minutes. Add sugar, salt, and boiling water to a large bowl. Mix until smooth. Add eggs, dough and butter at room temperature. Mix everything again until smooth. Add flour gradually, without ceasing to beat with a mixer at low speed. The dough should be soft and smooth. Cover the dough with plastic wrap and place in a warm place for an hour. The dough should double in size. When the dough comes up, knead it and let it sit for another 30 minutes. Roll out the dough about 1 cm thick. Combine cinnamon with butter (100 g) and brown sugar. Lubricate the dough sheet evenly over the entire surface.
