How to cook Natillas
Put the milk in a saucepan over low heat and add a cinnamon stick. While the milk is heating, remove the zest from half of the lemon and add it to the saucepan to the milk. Bring the spiced milk to a boil. Meanwhile, beat the yolks with vanilla sugar and plain sugar. The milk has boiled, strain it - remove the lemon zest and cinnamon stick. We put the whipped yolks in a water bath. Pour hot milk into whipped yolks in a thin stream and stir continuously.
