Today, let's cook delicious khychins with cheese and beet tops. The khychins are wonderful because they are prepared from yeast-free dough in a dry frying pan. They are minimally processed and are not fried in oil at all, which makes them tasty, easy to prepare and completely uncomplicated. For those of you who are afraid of the test, I assure you: you will succeed!

Ingredients:

  • Flour - 3 Glasses
  • Kefir - 250 Milliliters
  • Soda - 1/2 Teaspoon
  • Salt - 1 teaspoon (for dough + 1 pinch for filling)
  • Beet tops - 200 Grams
  • Onion - 1 Piece
  • Vegetable oil - 1 tbsp. the spoon
  • Hard cheese - To taste (like Caucasian or Suluguni)
  • Butter - 50 grams (for lubrication)

How to cook "Hychin"

Add soda and salt to kefir. Sift flour, pour kefir into it and knead the dough. Cover it. After kneading, you should let the dough lie down for 30 minutes and rest, then when molding the dough for your khychins will not tear. Prepare the filling. Peel the onion and cut it into small cubes. Fry in hot vegetable oil until transparent. Grate the cheese. I use Caucasian cheese, but you can take Suluguni or Adyghe cheese. Wash the beet tops and chop finely. Mix everything well. Roll 8 balls out of the filling. Divide the dough into 8 parts, press each of them into a cake. Place the filling on each tortilla. Pinch the edges of the dough tightly so that there is not even a small hole. Turn the piece over and with your fingers, starting from the middle to the edge (going in a circle), roll the dough into a pancake. When the tortilla with the dough disperses a little,a rolling pin can be used, but do not break through the dough. Take your time and be careful. Use flour to keep the cake from sticking to the rolling pin. Bake the khychins in a dry skillet on a medium level, frying them on both sides. Lubricate the finished khychins with butter and cover with a lid so that they do not become hard.
