Traditional Armenian thick soup with sauerkraut, potatoes and hot red pepper will be perfect on a fast winter day. Tasty and satisfying both hot and cold.
There are several variations of the Krchik thick soup. It can be cooked in broth or water, with or without meat. But it will be based on sauerkraut and chopped wheat. Today I will tell you how to make lean Krchik soup.

- Cabbage - 300 Grams (sauerkraut)
- Potatoes - 3 Pieces
- Onions - 4 Pieces
- Bulgur - 1 Glass
- Tomato sauce - 2 Tbsp. spoons
- Dried apricots - 10 Pieces
- Vegetable oil - 3 tbsp. spoons
- Red pepper - To taste (hot)
- Parsley - 1 Bunch
- Water - 2 Liters
How to cook "Lean soup" Krchik "
Pour dried apricots with warm water for 10 minutes. Squeeze the sauerkraut. Wash vegetables, peel. Cut the onion into cubes. Saute the onion in vegetable oil until golden brown. Add kale, bulgur, diced potatoes, shredded dried apricots, and tomato sauce. Cover with water, add salt and red pepper to taste. Bring to a boil and simmer, covered, over low heat until the potatoes are tender, about 30 minutes. Enjoy your meal!
