How to make Travel Cupcake

1. The cake is designed for a mold measuring about 30 by 11 cm. I did not have one and I baked it in two forms for baking bread. We cover the form with baking paper so that the edges hang down a little and then you can easily pull the cake out of the form using them. 2. Drive eggs into a bowl (weight is very important, therefore I do not indicate the exact number of eggs !!!), add salt and 200 grams of sugar to them. Beat for 4-5 minutes until lightening, thickening and weight gain. 3. Add flour mixed with baking powder to the egg mass and mix at low speed of the mixer until smooth. 4. Add melted, but not hot, butter, 30 ml of lemon juice and zest. Stir until smooth. 5. And add candied fruits. I have pineapple, but it would be nice to add orange or lemon. 6. Pour the dough into a mold.And we bake in an oven preheated to 145-150 degrees for 50-65 minutes until a dry match.
